Effectively you drop the Default and make the vertical alignment (VA) a mutual
exclusive choice of the three options.

I don't see a way to change the default in LibreOffice (not meaning it does not
exists). If Default VA in a different tool would be Centered, for example, and
we'd show this as Bottom I expect users to complain. 

The question is ultimately if we can drop Default. And the ODF description
gives a clear answer: No. It defines the VA including an automatic option.
