Perhaps, but from the perspective of building .app bundles, that replaces a headache (shipping Qt, PyQt, Poppler and python-poppler-qt5) with what sounds like an even larger headache, and there's a myriad of ways it won't integrate well with the macOS system around it (file dialogs, global menu, and so on). If the goal is to just have something that works, the Homebrew and MacPorts packages already work better.
