A relatively small non-LVM root partition.
A separate, small non-LVM /boot partition
The rest of the space dedicated to LVM.  One VG, perhaps more, depending
on what the space will be used for.  (System stuff versus application)
Separate (appropriately sized) logical volumes for
/home
/opt
/tmp
/usr
/var
