I've never seen anything in /boot that's needed between IPLs. It's
perfectly possible to umount the old, copy it, mount the new and keep
right on running.

If you feel the need to be absolutely completely sure, IPL the new
volume as soon as convenient. That's all the downtime you need to switch
 /boot, and if /boot is a ro shared with other systems, you only need
to test it once.
