I would look at the hardware RAID SCSI controllers.  They provide
always-bootable (i.e. they present a boot sector from the RAID array) RAID
array (mirroring or otherwise) and several have Linux drivers of various
sophistication to permit you to do things like determine remotely that a
disk has failed, and (in some cases) perform a hot swap of the bad drive.

I have personal experience with the DPT RAID controllers, which provide the
RAID and you can determine remotely if they're alarming, but not which drive
has failed, and they won't let you hot swap unless you're using a special
enclosure.

Others have spoken highly of the GDT controller, but I don't have any
experience with it.
