So you really just want to copy an audio track off a CD (that you presumably 
have suitable copyright for), and store it as some other format?
You don't need an audio device for that. What you really want to do is to 
convert the data from one digital format to another, and there are several 
tools available to do that (including cdparanoia, which you mentioned).

You probably don't want to play the CD and record it using your audio device. 
That would be a digital-analog-analog-digital conversion, which is not so 
good.

Or perhaps you want to do something else?
