Because the iPhone has much more (exploitable) functions, a much bigger count of users (and hackers), and the possibility to install third-party software on it (at least after a patch). The core Linux4Nano team has approx. 5 members with 2 nanos and no real hardware laboratory, I bet, that the hackers of the iPhone had much more resources of these kinds. And probably a not that sophisticated protection scheme, as they needed to implement a lot more functionality, which broke it.
