I think if you lack of harddisk space, 300 mb for /boot is overkill, 100 mb is 
more than enough because it will only hold grub, initrd and kernel.

as for making all in one / partition, if for any reason you messed up the 
system, the whole user data will be gone.

another solution is to make a server that hold all the system file, the server 
will serve the system file to all the dumb terminal booted with pxe / nfs with 
local /home partition.

i think the server - terminal system will saves lots of harddisk space.

as for distributions, IMHO fedora core is stable, easy to install but yum is 
slow and you wont learn much regarding how linux ticks with this.

if you really want to learn linux, go for gentoo or slackware.
