I agree that the hydraulic system is very undesirable due to lack of feel, 
although it may be easier to install. Likely the costs won't be much different, 
I don't know about that. Check Defender or Hamilton's for hydraulics and Edison 
for cable. The hydraulic system goes with a hydraulic autohelm pretty simple. 
And if you have a pilot house you can have multiple helm stations. But you 
still get no "feel" of the helm.

If you go hydraulic you will lose the "feel" of your helm. I'd go to wheel and 
cable steering with a pedestal. Then you could use an under-deck autopilot with 
either hydraulic or mechanical ram. Hydraulic is quieter. If you install two 
separate tiller arms on your rudder post, you would have backup steering.
