Yes all well known are either fully proprietary like IOS or parts of it like Android (like firmwares). (There are other OSs as well but all running into one of these categories)

Though there are good effort been done toward GNU/Linux Phone like:

To be fair about android there is only one fork of it which uses fully free software which is called Replicant:

I actually thought it was very cool that there was an open source 
videoconferencing platform that people would want to use for their business!

Please remind us a bit about Jitsi, the critical aspect for me (beyond the 
security/encryption thing of course!🤠😈) is that it wouldn’t require any special 
“app” to be downloaded for people to participate (which I think it does if my 
memory serves me wel), and that it would have an easy option for people to just 
call in without the video, and of course that both video and call-in would be 
available through a properly equipped (most likely PROPRIETARY🤠) smart phone.

And my two cents on alternative platforms like Jitsi: between 2 and 3 years ago 
I had a series of videoconferences regarding employment with a supercool 
company **NOT EVEN EVIL!😈** and they were through JITSI. Not a pleasant 
experience. Now imagine that platform suddenly having to deliver to millions if 
not billions of people online in remote classes, meetings, chats, etc etc.. 
Granted, it was 2+ years ago, but nothing gets super better in that time lapse 
anygüeys.

Most Internet Service Providers available to most people are VERY PROPRIETARY
So, in that context, your comment seems to be moot. Just because something is 
PROPRIETARY doesn’t mean it’s EVIL INCARNATE. It may not be perfect, it 
certainly will have many flaws, some of them serious, but I bet and confirm in 
my personal experience that it also has many positives.
