Mike,
     I am currently running a redhat Linux server, for web, email, and
file services.  I am using a commerical AV product call Sophos, which
does what you have indicated that you want to do.
Sophos has a mail receiver, MailMonitor, that receives all of the email,
passes it onto Sophos AV, quarantines the email if it finds anything, then
passes on the good email to sendmail for distribution on the server.
Sophos can be setup to auto-update the virus IDE's using cron to schedule
the updates as often as you would like.
I have not tried ClamAV.

     You may want to consider using IMAP for the LTSP workstations,
there is no place on a diskless workstation to store the email.
