I don't believe it pulls from /boot directly, it either uses a chroot or uses 
the /boot dir in 
the image itself.

You'll need to run ltsp-update-image to get the tftp dir stuff updated.

edit /etc/ltsp/update-kernels.conf:

PXELINUX_DEFAULT=menu
TIMEOUT=100

then run:

  sudo /usr/share/ltsp/update-kernels
  sudo ltsp-update-image

That *should* do it.
