Every application I know (Firefox, OpenOffice, Word etc.) works this way. It is much more user friendly compared to having one temporary setting (right-clicking) and a permanent setting (preferences). I think we should try to use such UI standards as much as possible.
Moreover it would be simple to implement in 1.4. No additional GUI, just remembering a few on/off states.
For the auto toolbars I would suggest adding two additional items to the right-click menu: "Auto-Hide Math Toolbar" and "Auto-Hide Table Toolbar".
As Jürgen has explained already, a View > Toolbars menu which is identical to right-clicking should also be added. Again this is the standard for all common application. So there is also no Mac OS X problem.
