I've some RHEL 5 here and went with them from .0 to .1, .2, .3 without pain upgrading them during runtime with yum. The next major (6.0) release will be a bit more painfull for the Xen -> KVM transition but I've been told that there are even migration path that provide you with KVM for the hypervisor and still running a Xen domU on top.
