Do you still have the original bitmapped image ? There is a lot of tools
within Linux that can do the conversion -> eps. Gimp does it, but also
command-line programs like convert (from ImageMagick), jpeg2ps (
available from http://www.ifconnection.de/~tm , interessant because the
image remains compressed. gain a lot of space-disk !).

Sometimes I got problems with (e)ps files done within windows, and now I
prefer do the conversion so.

Also you could convert your original image in grayscale.
