Janice, there is a way. Check Applications>Fontbook. there are all the available fonts listed under different categories. You can delete fonts you do not want or, what seems better, disable them. I haven't experimented with them, but it is there where you get rid of those fonts you don't want to show up, in order to speed up changing them.
