I was thinking the same thing.  We used to have a Cisco (Catalyst 4000?  5000? I don't 
remember.) that had the AppleTalk turned off and when it was off we only saw our own 
zone (being seeded by our NT Server) but then they turned the AppleTalk on and we 
could see zones throughout the whole campus.  They even setup the router to seed the 
zone so we wouldn't have to do it on our server.

Just this past fall we installed a newer Cisco and no problem with it routing 
AppleTalk.  That's not to say they don't make some that don't do AppleTalk.  If you 
have printers in other areas that are AppleTalk only (they don't do IP) then I can't 
think of anything that will make them IP unless you buy a print server that supports 
IP and AppleTalk.  You could then print to the print server via IP and then the print 
server can send the data to the printer via AppleTalk.  Or, a print server that 
supports IP and then you connect the printers directly to the print server.
