yes, exactly, to your last sentence, but …

wifi approaches generally have too much lag for real-time image display, and few cameras have wifi; the EyeFi cards work to transfer images (most people transfer JPGs, not RAW, to get better throughput), but they can't control the camera; even Bluetooth 4 is a lot slower than 802.11n, and i know of no Bluetooth 4 cameras other than smartphones ;?>

USB is only somewhat faster than wifi, but it is built-into many cameras now, so it is the current best choice; a USB3 dock connector would be desirable, since it'd be backward compatible and cameras are now coming out with USB3 (e.g. D800); USB3 should allow a good tethering experience, except maybe with very high pixel-count cameras

from Apple's perspective it does not need to be about catering to the photo-tethering niche, it is whether they feel like supporting APIs to use the USB generically, rather than only in special cases; i don't know what the hold-up is because it would seem to open up dozens of possibilities, and third-parties would do all the work from there
