In addition to the very good suggestions you have received, there is a book,
written by Janet Ingber, and published by National Braille Press, called Mac
Basics For The Beginning User. I think that when somebody is in the very
beginning of learning how to do something, they need to have some type of
organized fashion of learning it, rather than just picking it up in bits and
pieces. At least, it is that way for me, others learn in different ways. I am
going to paste the link to this book below, in case it might be of use to you.

Hello,

Can you use Safari browser on your new mac? If you can, there are lots of good
web pages and websites that will help you learn. There's Apple's own
accessibility section. I'm pasting below a link to VoiceOver on the mac
section of Apple's website. If you click on it by first interacting with the
text of this message pressing vo+shift+down arrow and then pressing vo+spacebar
on the link, safari will open and you will find yourself on the relevant page.
I assume you know that vo stands for control and option keys on your keyboard
held down together while you press other keys. the link to Apple pages is here:
https://www.apple.com/accessibility/mac/vision/

There's also a very good website called applevis which you can visit where you
will find guides and tutorials as well as discussions on various aspects of
voiceover use. The link is below here:

www.applevis.com

Also, VoiceOver application on your mac (often referred to as VoiceOver
utility), which you open with the shortcut key vo+f8, will launch it and each
section has a help file related to it where you can read and learn an awful lot
about VoiceOver and its functions.

Also, RNIB runs a volunteer programme through which you might be able to find a
volunteer who might help you learn. Contact RNIB and ask for accessible
technology team and discuss your needs with them.

Good luck
