If the person is a braille user, he or she may wish to get some braille
resources. I believe that Mark Taylor said that one could get this from the
APH (can't remember if that's the right initials from the American Light
House for the blind) or one can get this from the Royal National Institute
of Blind People (RNIB) Uk.
I personally like braille to learn stuff with as I don't get too much done
if I have to learn from an electronic source.

In addition to the very good suggestions you have received, there is a
book, written by Janet Ingber, and published by National Braille Press,
called Mac Basics For The Beginning User. I think that when somebody is in
the very beginning of learning how to do something, they need to have some
type of organized fashion of learning it, rather than just picking it up
in bits and pieces. At least, it is that way for me, others learn in
different ways. I am going to paste the link to this book below, in case
it might be of use to you.

Also, VoiceOver application on your mac (often referred to as VoiceOver
utility), which you open with the shortcut key vo+f8, will launch it and
each section has a help file related to it where you can read and learn an
awful lot about VoiceOver and its functions.
Also, RNIB runs a volunteer programme through which you might be able to
find a volunteer who might help you learn. Contact RNIB and ask for
accessible technology team and discuss your needs with them.
