I don't own AirPods yet, of course. That said, from what I've read, you switch to them like other headphones. The difference is you don't need to pair them. On the Watch, bring up Control Center, hit Airplay, and select them. On the Mac, they should live in your bluetooth menu and activate if you choose them from there. On iPhone, go into Airplay from Control Center and they should be there. Again, this is just what I've picked up while reading, not experience.
