PDFs shouldn't go into git unless you can't track their content some
other way. Why not just collaborate using the wiki - a tool already
in place and already suggested by walter - rather than something not
very well suited for editing or concisely discovering what's changed
between two versions or...etc.?

PDFs or just web pages (much smaller in size) can (and should, to
avoid duplication of effor) be created from the wiki.

Wiki-generated contect (c.f. the wiki slicer activity) ticks all these
boxes.
