Can you boot a beige G3 with 7.5?  I didn't think that worked.  
There's another disk (as I read from
http://www.netbsd.org/Ports/macppc/SystemDisk-tutorial/ ) that has a 
System 8.1 boot image,
http://download.info.apple.com/Apple_Support_Area/Apple_Software_Updates/English-North_American/Macintosh/System/Mac_OS_8.1_Update/Disk_Tools_PPC.img.bin
 
But I don't know how to get the image on a disk without another mac.

You can also find third party disk utilities that boot- I've seen them
on the web for a couple of dollars, $5 and less.

I'd look around at NetBSD for a beige- I don't think they need a
permanent MacOS installation, as Linux does.
