Mark, That's pretty impressive! I just bought a machined Z24 crank and a Haltech F9 so watch out, you may have some friendly desktop dyno competition ;) What injectors are you using? Mercedes 036?
To find out the peak torque in meaningful terms, have a look at the dyno graph and find roughly at how many RPM the torque curve peaks. Cross reference the power curve to see how many kilowatts the engine is making at that point, and then use this formula: Nm = (kilowatts * 9550) / rpm EG: The torque curve peaks at 4500rpm.
