If you are going through W Memphis (AR), get off at Missouri Blvd -- it
is a fairly large exit, lots of gas stations, truck stops there. Go
about a mile south and across from a Wendy's/Backyard Burger, next to a
Citgo? station and a bank I think, is Ray's BBQ, in a little strip mall
shop on the west side of the street. He gots some mighty fine pigmeat Q
in there, for Memphis style. I stopped there once to get gas, smelled
the Q, followed my nose, stop there whenever I get through that part of
the country. I recall fuel being cheaper there than in TN.

If your plans put you around Memphis on a weekend (maybe on the way
back?) That shouldn't be a problem.
MS Streets and Trips does just what you want. How many miles a day,
start time, end time, will put you asleep in places where there
actually are hotels, etc. Only thing is I don't think there is a Mac
version, and it does cost money ;) ($30). Thats about all the trip
planning features though... anybody know of some software that is
excellent for trip planning (stay at this "resort" for this time
frame, stop at Grand Canyon for x hours, etc)

and let technology tell me where I the stops can/should be.
