Well, take a look at the original ad, which has more pictures.  Perhaps
this was a special order option.  My father used to own a Pontoon which
had the same large canvass sunroof.  I'll try to attach a picture from
the original ad.

Nope!  250S had the steel sunroof.   I drove a 67 250S and a 68 250 
SE. I believe all sunroofs after 1963 or there abouts were steel.  I am
pretty sure 61 VW had the canvas type.  I don't remember seeing an MB
with a sunroof in 61 or 62.  I think any sunroof would have been steel
in the 111/112 chassis (starting in 1959) and in the 600. 
There were a few second generation 110 (after 1965) that had steel
sunroofs in NA.  (I can't say about europe)

I believe what you are seeing is a smoke color plastic sunroof
deflector.
