Reminders me of the 300SDL that had the idle control sensor and AC high engine temp sensor connectors switched -- the AC would run till the engine hit operatin temp, then it would turn off. The idle wasn't affected that I could tell, but it was a great running 603. Both sensors were in one housing - two connectors on top.
If yours are switched (I don't know what a 560 has - my M117 was a '78 450), it might do something simlar, but to the idle circuit.
