Oil low. Oil drained and forgot to replace?
That describes it perfectly. What I can't figure out is that if I have a
bad diff why this develped AFTER the drive train transplant. I had no
whining noise at all before this (the differential was NOT changed with the
engine/transmission). Could a replacement of the drive train transmission
cause the diff to "stress out"?

If its a worn out diff it will not whine that much if at all when you put
it in neutral because there is no load on it. Even going down the road if
you give it throttle it will whine, let off it will quiet down because there
is no load on it.
