We started with the book "Build Your Own Earth Oven" by Kiko Denzer, 3rd
edition, then 'made it our own'. Big stumbling block was the lack of clay
here - almost only sand and sandstone, so we bought dry fire clay.

We have a lot of oak wood, but no place to use it, hated to just burn it to
get rid of it, and my wife has liked this idea for a long time. It takes
five to six hours to get it really hot. You use it to bake pizza, etc.
first with live fire on one side, then roasting with a little less fire,
then more higher heat cooking with the coals in the oven, then remove the
coals and use the residual heat for several more baking's - we could
probably bake three sets of bread.
So it's a matter of heating once, then using for a lot of cooking. It takes
two of us to keep up with preparing the food to be cooked to get the most
use of the oven.

Since we both like to 'play with fire', it's a lot of fun. we use the oak
that would otherwise go to waste, and get a lot of really good food that
can last for several days, and bread to freeze that lasts even longer.

I added the smoker box to use the smoke/heat that was just going up while
we were heating the oven - and it works great. I had to extend the chimney
pipe that is directly above the oven door because the draw through the box
was enough to force too much hot smoke into it for slow smoking. I ended up
with dampers in both the vertical pipe and the pipe going to the smoker box
to control the temp.

We've been baking pizza in the gas grill with  'pizza stone' for years, so
if we want to use gas, we'll continue to use that (a LOT faster for a quick
pizza).
