I have a Mac Pro 1,1 that’s been running El Capitan flawlessly since it was 
released.  There is a boot loader that can be run which requires changing a 
couple of boot.fi files and all is well from that point on.

If you need specifics, let me know.  I’ve been using the MB 1,1 since Mavericks 
using the boot loader and it’s been fantastic.
