I don't think they're piezoelectric, thats when you rub two crystals together 
to get a spark, like a grill lighter. I think you've got electric lighters.
Short answer, maybe. It depends on if you've got an electric gas valve or not. 
Unplug the stove or turn off the breaker and see if you can light it.
A gas range is in the plan for here. I'd like something from the '50s, maybe an 
electric clock but I wouldn't be upset if it didn't have one. We've got one at 
camp but its apartment size, other than being small its a dammed good stove.For 
now our glass top electric is adequate, I can't see throwing away something 
that works...

We have a gas stove that has piezoelectric igniters.  Would I be able to light
