The orings generally get chewed up on removal, even if new. I always
replace them. Orings are relatively cheap. The cost of having to redo
the job far outweighs the cost of 6 or 7 orings and copper seals.
one at a time is good, but I do the torque sequence together. In other
words, put them all in finger tight, then follow the torque instructions
for the whole bunch in sequence.

Absolutely use new copper seals, the o-rings are probably fine.
I do one at a time.
New springs are a good idea, too, as they can also cause uneven idle
due to different spring strength from spring to spring allowing
slightly different injection timing at idle (same as opening pressure
on injectors). An annoyance, but that 5 cylinder is prone to vibration
at idle anyway and you don't want more.
