Run the bike chain to a Bosch externally regulated alternator then feed the rotor through a rheostat & dump the current into a battery. Use the rhoestat to vary the charge rate (the pedal resistance). It won't take much to create a nice load.
You need to gear up to the alternator - about 5,000 RPM at the alternator shaft should do nicely. Then drive a radiator cooling fan from the battery & point the fan at you. You will probably need to suplement charging with a battery charger.
