My daughter got a nice Buel 500 single cylinder. It worked just fine for her commute of about 70 mi on the weekends when she had her National Guard duties. Had plenty of power to keep up with my BMW R100 but very manageable. Vibrated quite a bit at idle but not noticeable at speed. She put over 15,000 miles on it in two years before it was taken from her by a less than watchful motorist.

In my original post I suggested anything from 500 to 1100. As for the top speed and 0-60 times, I sure as heck wouldn't want a beginner on a bike like that - it's a disaster waiting to happen. I'm not familiar with that bike, but it sounds like a crotch rocket. Not something I would want to be doing an 80 mile a day commute on. To each his (or her) own, I say. The suggestions were made based on personal experience as I mentioned in a previous post.
