I heard that alot when I first started riding. Then I bought a Kawasaki LTD 454 for my wife. ~32hp IIRC and its fine. Sure its at 5700rpm on the highway but it acclerated faster than a same year Corvette (supposedly anyway) and has plenty of power for hauling my butt around. I've ridden it on the highway for an hour at a time on my commute with no issue. It does have a fairly narrow seat and its a small bike so I look goofy on it but not any worse than I would on a Harley Sportster...
Which is not to say I don't understand power, my CB900f has LOTS of power and is LOTS of fun and needs alot less shifting but the Kawi was 1/2 the money. BTW I'd suggest something in a standard. I find them alot easier to ride for a newbie.
