Many moons ago, I had the unfortunate opportunity to autocross an '85
GTi 2.0L 16v with manual steering.  While the car was a relative
rocket due to the monstrous cams, the ratio of the manual steering
rack made the car more than a challenge to hustle around the course. 
So much so that it put a serious hurting on my shoulder joints (must
have been a premature arthritic condition or something).  

FWIW, I still have p/s in my race car.  While it's not necessary to
have the instant response that's necessary at an autocross, the p/s
makes the car a bit easier to drive and I think I can live with the
~2 hp that the p/s pump drains from the engine.  

All in all, unless you intend to use the car strictly as a track car
and are willing to live with a slightly slower steering response,
stick with the p/s setup.
