1- Multiple IP configuration for apache is very well explained
in the standard documentation (single interface/multiple names
is very well explained, too... BTW)
2- Alias interface in RH51:
netcfg -> interfaces -> (click interface: eth0, eth1,...) -> alias
Assign ip address and netmask, and, eventually, add a route (if the aliased
interface is in a different network than the primary one) and you are done...
