My guess is that you ought to go for the 1.2.5 tarball.  mutt now uses
a linux-like versioning system, so 1.0 and 1.2 are considered fairly
substantial upgrades.  Most of the patches you'll see are either bugfix
patches which have been included in the later releases or feature patches
which wouldn't be in the diff upgrades anyway.

Finally, I just peeked at ftp.mutt.org myself and I don't see any diffs
earlier than 1.1.14 (except for the 1.0pre* series), so you'd have to get
to 1.1.14 to diff your way up anyway.
