Well, in my best low tech manner, I think I've come up with something of promise. What I did was:
1) Select all the messages in the inbox or outbox. 2) Perform File|Save As and save the entire contents as a text file. These big text files open fine with vim. When I get home, I may have to fiddle with the From header to get things right. But, this may work. I'll report back.
