What's happening when you now try to access livetv on the MVP's menu.

It is complaining that it may not be able to resolve my hostname.

It doesn't store the files...it "mounts" the remote NFS share on that 
directory, in much the same way you would "map" a remote windows share to 
a drive letter on Windows, without actually copying the files over. 
Depending on network setups some people find the NFS mounted access to the 
files can be more efficient, and allow higher bitrates than the MythTV 
protocol access, others find the reverse. If MythTV protocol works for 
you, I'd stick with it for now.

I did a little reading on what NFS is about and I think I have found my
error in the /etc/exports file.  I copied someone else's mount name instead
of mine (/data).  When I'm back at home I'll give it a try.  Can you help
with my case of two mounts, one for recordings and one for livetv?  Is there
a way to make live tv work with only using ip addresses instead of hostname
and domainname (which I don't have setup yet)?

Er...not sure about what the timezone variables need to be in North 
America. The time you're seeing on the boot screen is actually the 
time/date the dongle you're using was compiled/released, so you don't 
really need to worry about this.
