  Page down to the description of module "standard," option "access," 
suboptions:

"    *  http: streams over HTTP. 

Item options are:

          o mime=<mime type> to set the mime type returned by the server."

  Putting this all together, I think something along these lines will work:

vlc --sout "#standard{access=http{mime=mpeg/video}...}..."

  I'm not sure how to convert that to the other parameter format.  I'll try to 
force MIME type next week.

  This VLC option stuff is starting to cross my eyes.
