For Yahoo! Messenger you can use the search/find file utility, a version of which is in most of the desktops or Window Manager's menus. Once you have located the path to the executable file its pretty easy to add it to a panel.

However, I recommend you install GAIM which is much better
for Yahoo Chats than the official Yahoo messenger for Linux.
It may take a little getting used to though. But you can
also chat in Yahoo group rooms with it.

KMESS is a great MSN Messenger chat client and has
and it is much better at file transfers.

Both KMESS and GAIM install automatically on GNOME
and KDE menu's.
