If you installed it with the RPM package from Mandrake Club it will be in your 
menu under

Menu>Office>Publishing>Acrobat

To get a desktop icon just drag it out of the menu and onto the desktop.

If you installed it from the Adobe site there will be no menu item. The 
executable is called acroread and will be somewhere like /usr/local, or /opt
You can create a desktop link by right clicking on the desktop.

To associate acroread with pdf docs 
Menu>System>Configuration>ConfigureDesktop>Components>FileAssociations

Enter pdf in the search box, select the result and in the right hand side move 
acroread to the top of the list of applications. It it is not present add it 
to the list.

BTW: Acroread 7 is spyware. Documents may have scripts embedded to make 
acroread report back every time you read them. To stop it you must configure 
Acroread to disable javascript. None of the OpenSource pdf viewers are 
spyware.
