I don't know about Gnome. Here is my experience with KDE:
If you installed the program from an rpm built for RH 8.0, then it will
create a menu item (and place it in the correct location on your menu)
automagically. This may take some time (I think it's a cron job that checks
for new packages in the RPM database, but I haven't poked around much to
check), but it will happen.
If you want to manually edit your menus, then you find the menu editor
utility by right clicking directly on the redhat icon on the toolbar.
