Jason,

Sepia toning is truely done in the processing stage.

The easiest way to get this effect is to buy Kodak 400CN or Ilford XP2.
Both are excellently fine grained black and white films that are
processed in standard color print chemicals. Simply take the exposed
roll(s) to any minilab and ask for sepia toned prints. They just print
the B&W negatives onto color film with a color bias toward the browns.
