The zoom you used is a variable-aperture one. If I remember well, the
25-85 if f/3.5 at 28mm and f/4.5 at 80mm. About one stop differene that
could explain your "problem".
The aperture marks on the ring are only valid for the wide end of the
zoom (i.e. 28mm). When you zoom in, the actual aperture gets smaller.
If you set the ring to f/8 and zoom in, you will soon reach f/11, and
the LCD will show you the latter.
If you change the aperture ring to obtain f/8 in the display, and then
zoom out, you will soon get something like f/5.6.
