In my experience, decisions on language choice in most of the big tech companies are generally bottoms up. The company often won't have any oversight on language choice. I've seen people in big tech companies consider not going with Rust because they were worried about the size of the talent pool. But those were individuals making a choice, not some edict from the top.
I've had a number of conversations about this very topic, and I am sure Nim wouldn't have the same problem Rust sometimes does, in that people who might be interested in using Nim won't have the same concern, because the feeling is that Nim being very Pythonic would be easy to learn. However, the maturity of the ecosystem is a much more practical concern, and libraries are a huge part of that.
