*Cold apple pie*

*Ingredients*

2 cups pineapple juice
1 cup sugar
10 apples (peeled, cored and cut into slices)
3tbsp cornflour
1tbsp butter
½ cup raisins
4-5 drop vanilla essence
½ tsp cinnamon powder
1/3 tsp salt
Piecrust to line a nine-inch pie plate

*Method*

Preheat the oven to 180 degrees C. Roll out the piecrust and line a baking
dish. Bake in an oven for 10-12 minutes till the crust is just turning
golden brown.
In a saucepan, combine the pineapple juice with the sugar and bring to the
boil. Lower the flame and add the apple slices and cook for a further 3-4
minutes so that the apples are cooked but not soggy. Remove with a slotted
spoon and remove from the syrup.

Mix in the cornflour in 3 tablespoon of water and add it to the boiling
liquid.
Mix in the butter and the essence, cinnamon powder and continue to cook for
a further 7-8 minutes.

Put off the flame and mix in the raisins. Pour half of this syrup into the
pie shell spreading it to cover the bottom. Arrange the apples on top and
pour the remaining liquid. Cover and refrigerate until the pie chilled and
set. Glaze it with pineapples. Serve cold.
