*Peach and kiwi cake*

*Ingredients*

1 basic sponge
½ tin peach halves
200gm fresh cream
3-4 tablespoon icing sugar
1tbsp custard powder


*For garnishing*
2-3 kiwi fruit

*Method*

Use one cup of the syrup from the tinned peaches. Melt the custard powder in
2-3 teaspoon of the sugar syrup and heat the remaining syrup lightly. Mix in
the stirred custard powder and heat it a little so that the syrup thickens
slightly. Remove from fire and keep aside. Cut 3-4 pieces of the peach
halves into small pieces and mix into the custard.

Cut the sponge cake horizontally into two halves. Place one layer of the
sponge cake on a plate and spread the prepared custard mixture on it.
Place the other layer of the sponge cake on it. Chill the fresh cream and
whip it gently with the icing sugar till it is smooth, but do not over whip.
Spread over the cake and decorate with kiwi fruit.
