Low-Fat Creole Chicken and Rice1    cup white rice1 link sweet turkey sausage 
(2 oz)1      red bell pepper, diced1      green bell pepper, diced2      ribs 
celery, chopped4      scallions, sliced (plus additional for garnish)1/2  tsp. 
paprika1/2  tsp. thyme1  pkg roasted chicken breast, cut into 1-inch pieces (10 
oz)1/2  cup nonfat lower-sodium chicken brothCook the rice according to package 
instructions.  Squeeze thesausage out of its casing into a deep skillet. Brown 
over medium high,stirringconstantly to break up lumps.  Add the peppers, 
celery, scallions,paprikaand thyme to the pan and cook, stirring, for 4 
minutes, or until thevegetables are softened.Add the chicken and broth and cook 
another 3 to 4 minutes, oruntil the chicken is warmed through and the sausage 
thoroughlycooked.  Youalso can add diced tomatoes and a pinch of cayenne.  Stir 
in the rice,cover the pan and cook another 2 minutes, or until the liquid 
iscompletelyabsorbed.Makes 4 servings.Nutritional
